Re-invent the wheel? Cooks Illustrated already did with their Gluten Free Flour Blend.
When I first began baking gluten free, I was highly discouraged by the available brands of Gluten Free Flour. They either had a funky taste, poor results, lots of additives or were prohibitively expensive. Then, one night I couldn’t sleep and was watching an episode of “America’s Test Kitchen” and lo and behold they had just come out with a Gluten Free Cookbook and had created their own gluten flour blend.
I must admit, I’ve always been a disciple of Cooks Illustrated and thus I ordered the book and quickly got the ingredients together to make my first batch of GF Flour. This blend performs beautifully. While not a one to one substitute, I can’t even tell you how many times people have said “Are you sure this is gluten free?”
I have found that Vitacost.com has the best prices for all of these ingredients and ship very quickly. It is also well worth the $15 to invest in a kitchen scale. It makes it so easy to put this blend together.
Most of the recipes on this site will use the ATK GF Flour Blend. Below is a link to their recipe, I make it as directed with one small change. I use powdered goats milk instead of powdered milk just because I try to keep the amount of dairy in my diet to a minimum.
